Sauteed Asparagus and Broccolini with Hollandaise

Ingredients For This Recipe

  • ½ bunch asparagus, cut & trimmed
  • 3 broccolini
  • 1 tbsp oil
  • Kosher salt
  • Pepper
  •  
  • Hollandaise
  • ½ cup unsalted butter, melted
  • 3 large egg yolks
  • 2 tbsp lemon juice
  • Pinch cayenne pepper
  • Kosher salt

Preparation

  1. Place egg yolks, juice, cayenne and salt in blender and process on high for a few seconds.
  2. Lower speed to medium, open lid cap, slowly pour in butter and blend until emulsified.
  3. Transfer to mixing bowl.
  4. Preheat skillet for 2 minutes over medium high; add oil.
  5. Reduce heat to medium, add asparagus and broccolini; sauté until nice and tender.
  6. Season with salt and pepper to taste.
  7. Plate, drizzle with hollandaise and garnish.
